Description
Sodium benzoate is a benzoic acid sodium salt, a white, odourless salt. It is found naturally in blueberries, apricots and cinnamon and is used as a preservative due to its antimicrobial and fungicidal properties. The product needs a pH between 3 and 5 to be active. For optimal product preservation, sodium benzoate should be used in combination with one or more other preservatives, such as potassium sorbate.
Sodium benzoate is compliant with ICEA certification standards.
Application:
- Mix a solution made up of
- 80 g distilled water
- 10 g potassium sorbate
- 10 g sodium benzoate
- To do so, first, dissolve the two preservatives in just a little water (from the 80 g water measurement).
- Once completely dissolved, add the rest of the water.
- This mixture is used in an amount of 2.5 g in a preparation of 100 g (i.e. 97.5 g preparation and 2.5 g preservation).
Note: This is an alkaline preservative (pH 7.5) and therefore it must be adjusted to 5 with a pH regulator (lactic acid or citric acid) for preservation.
