Sage was cultivated in monastery gardens as early as the 9th century as its useful benefits for soothing the throat were already recognised. This tea is also made with ginger root, which is also an important source of energy in Chinese herbalism. Mallow leaves, rose hips and elderflowers provide a mildly sweet taste.

Preparation:
